Our Story ...

Lou Kolbauer is the owner and creative mind behind this local favorite. Chive first opened its doors in a small space on Old Dixie Highway in 2013 and quickly became known for its Quick, Creative Cuisine, earning a loyal lunch crowd. That same year, Lou was honored as Top Chef of Vero Beach. As popularity grew, the menu expanded to include suggestions for new diners. In 2014, a second location opened on Royal Palm Pointe, offering more seating, and in late 2018, Chive moved to its current home on Miracle Mile. This location features a full-service bar, additional seating, and an expanded patio for outdoor dining.

Before opening each location, Lou personally spent months painting, cleaning, and designing all the artwork throughout the restaurant. Take a few moments to enjoy the recycled pallets transformed into unique artwork. We hope you feel welcome and enjoy the space as much as we do. In 2017, Lou opened Green Marlin Restaurant & Raw Bar to provide Vero Beach residents with a relaxed atmosphere for enjoying the freshest seafood. We felt the city was missing a casual sit-down spot with fresh oysters and top-quality seafood at an affordable price.
